you're not missing anything. Voldemort's dream was to divide his soul into 7 pieces. (meaning 6 horcruxes + his own soul = 7) but then he made 7 horcruxes with Harry, meaning his soul was divided into 8 pieces (of course that was unplanned) but anyways he survived, didn't he?
